Beer-zuke daikon

Beer-Zuke

Beer-zuke refers to the radish pickle similar to takuan-zuke. The enzyme in the beer along with sugar and a small amount of alcohol accelerates the process of pickling. The process is significantly faster and simpler than pickling takuan. Beer-zuke may be also used as a feed to bettara-zuke.

Material
  • 8 lb (or 4 kg) daikon (4 to 5 large white radish).
  • 2 can beer (or small bottles)
  • 1/4 lb salt
  • 1 lb sugar
Preparation
  • Mix beer, salt and sugar well in a large bowl.
  • Dip daikon in the beer mix.
  • Place a round plate or lid on the top of daikon and apply a weight on the lid. The weight could be a stone or bottled water so daikon will not float.
  • In a day or two, the liquid level goes up while daikons shrink to some extent. The pickles are ready for serving. Remove the weight and keep daikon soaked in the liquid.
Save finished beer-zuke in refrigerator.
