How do you like Dorayaki? Here is a simple way to make genuine ones. To minimize the effort of cooking, we make giant dorayakis in a pie size, which will be cut into pieces.

Material:
  • 1/2 cup flour
  • 1/2 cup Bisquick pancake powder (if not available, substitute with any pancake mix)
  • 2/3 cup sugar
  • 2 large eggs
  • 1 tea spoon honey
  • 1/4 cup warm water
  • 1/2 can of 18 oz Red Bean Paste (Companion brand in a Chinese grocery, or an equivalent Japanese brand although more expensive)
Baking:
  • Add honey in the warm water and mix until completely resolved. Set it aside. Put eggs in a bowl and beat one minute. Add sugar and continue beating until a peak can be made. Add flour, Bisquick, and honey water. Mix the whole with a wood spatula with both horizontal and vertical movements.
  • The flour-egg mixture is enough to make 4 sheets of 7" diameter pancakes. Bake them in a fry pan with a gentle heat just like to bake breakfast pancakes.
  • Spread 1/4 can of red bean paste over a pancake sheet. Cover with another sheet to complete a beans cake sandwich. You have now two sandwiches. Cut the sandwiches like cutting a pie.
Serve dorayaki with green tea.
