Marinated Salmon

Buy a 1/2 lb piece of raw salmon cut for sushi or sashimi. (Do not use salmon sold for other cooking.) The marinating procedure is the same as for trout ( masu-zushi ), except that the time of marinating is mush shorter for salmon.

Material
  • 1/2 lb salmon for sushi or sashimi
  • 1 cup vinegar
  • 2 table spoon sugar
  • 1 tea spoon salt
In a deep dish or bat, mix vinegar, sugar and salt until sugar and salt dissolve. Dip the salmon piece and set aside for 3 hours.
