Shrimp pasta

Materials for 4 servings

2 dozen large frozen shrimps

2 large onions, chopped (see photo below)

1/2 cup high quality white wine (never use wine for cooking)

1 table spoon salt

2 chicken bullion

2 tablespoon extra virgin olive oil

Angel hair pastas for 4 servings

0.5 cup parsley, coarsely chopped

 

Cooking

·         Boil pasta with 1 table spoon salt.

·         Put chicken bullion, chopped onion in a skillet. Heat with medium high heat for 4 minutes or until onion is slightly browned.  Add white wine and boil at high heat for 2 minutes, or until alcohol is evaporated off. Turn off heat and immediately add shrimps and mix with onion. Transfer the boiled pasta while hot into the skillet. Turn upside down the pasta using a tong.

·         Serve in large dishes and garnish with parsley.

·         Do not use cheese on the top. In Italian cuisine, no cheese is used on seafood pasta.
