Maze-Zushi
Maze-zushi is a sushi made by mixing sushi rice with
chopped ingredients, primarity vegetable, but vinegared salmon, or mackerel
may be used as well. The ingredients used in maki-zushi
can all be used in maze-zushi.
Materials
Vinrgared
rice for 2 servings.
Dried
shiitake, cooked and flavored with dashino-kona, soy sauce and sugar (see how to cook kanpyo and shiitake)
Kanpyo,
cooked and tasted with dashino-kona, soy sauce and sugar (see how to cook kanpyo and shiitake)
Thick
omelet chopped (see cooking instruction in thick
omelet for sushi )
Radish
seeds sprout (optional)
Additional
optional ingredients:
Renkon (lotus roots), boiled
and marinated in vinegar, salt and sugar
Takenoko (bamboo shoot),
boiled
Green peas (Optional), boiled
Imitation crab, chopped
Cooking procedure

Marinate boiled renkon (lotus root) in
vinegar added with sugar and salt

The total amount of ingredients would be
about one half up to 1 of the vinegared rice in volume.

Combine all the ingredients with vinegared
rice, and mix gently with wooden spatula.
