 HOW TO MAKE Shio Koji (salt koji)

                                     

Shio koji (salt koji) is a condiment frequently used in Japanese cooking. It is sold online

(for example, Amazon.com) but easy to make as explained in this article.

 

Materials

Koji (dried) 170g

Sea salt 60g

Water 230mL

 

If fresh koji is used, the materials are

Koji (dried) 200g

Sea salt 60g

Water 200mL

 

 

Procedures

 

In a wide-mouth Mason jar, mix koji, salt and water thoroughly.  Put the lid loosely, and keep at the room temperature. Mix the content once a day. Shio koji is complete in 5 to 10 days.  To smooth the content, blend the content using a hand-held electric blender.  Keep shio koji in a refrigerator.

 

 

How to use shio koji

  1. Marinating fish, and tenderizing and giving flavor to chicken, pork and beef.
  2. Quick pickle vegetables such as cucumber, eggplant, radish, cabbage, hakusai and carrot.
